This chickpea rice pilau is inspired by India. It tastes great and tastes delicious with salad and yoghurt (vegan).
Recipe - serves 4
Ingredients
1 Cup Rice
2 Cups Water
1 tin Chickpeas
1 Onion
0.5 tbsp Cumin
1 tbsp Garam Masala
Oil for frying (or use water for healthier version)
Method
1. Brown onion in oil (or for the healthy version use water)
2. Add Chickpeas, Garam Masala, Cumin
3. Add Rice and allow it to boil until water almost evaporated
4. Cover and turn down heat until water fully absorbed
